Banana bread

Do you like sweet taste and do you like baking? In case you do, then get ready. In case you do not, get ready too, because you will love this.

Banana, nuts, seeds, cinnamon and plenty of other flavours. All this in a soft delicious banana bread that we have made for you. We baked it for ourselves and we simply had to share it with you.

Ingredients

4 ripe bananas

1/3 cup of sugar

1/3 cup of oil

2 cups of soft white flower

1 tbsp of ground cinnamon

2 tbsp of ground linseed

Pinch of salt

Nuts and seeds of your choice

First you need to pre-heat the oven to 180°C. Then mash the bananas. In case you want to place pieces of banana on top of the bread, leave some aside. Blend the banana mash with the coconut or any other plant oil and sugar. We fancy coconut sugar while it provides caramel colour and its iconic taste. The amount of the oil depends on how ripe, meaning sugary, the bananas are.

The next step is to mix all the loose ingredients: flower, baking soda, cinnamon and salt together with nuts and seeds. We used hemp, pumpkin, sunflower and chia seeds together with chopped cashew and para nuts. Careful with para nuts. From our article you already know that the daily dose should not exceed 3 to 4 pieces depending on body weight. You will surely share yours, so you do not have to watch the amount so carefully.

Chia seeds are also a wonderful alternative to eggs in vegan cuisine. In contact with water they create protective jelly shell that will serve as a good binding material there where eggs should be used. Proper ratio is 1:3 (chia:water) = 1 egg. That is the amount used in this recipe.

Now you have two mixtures. Fluid and loose. Mix everything together and with a spade pour the substance into a form greased with oil. You can place slices of banana or the whole banana cut lengthwise on top of the bread so that it is obvious at first sight what goodie are you baking in the oven.

Leave it baking for at least 20 minutes. A test with a wooden peg will tell you when the bread is ready, After taking the bread out of the oven, let it cool down and your siesta can start.
