1/2 zucchin
1 small red onion
2 - 3 tbsp of olive oil
1 cup of cooked bulgur
salt and ground pepper
handful of parsley
First, we cook the bulgur according to the instructions on the package. Cut the pepper into smaller pieces of 2×3 cm, the zucchini into thin slices, and onion into eighths. Set each vegetable aside separately so they do not mix.
02There are 2 ways to prepare the vegetables – either grill them, for which you prepare them by mixing 2 tbsp of olive oil with salt and tossing the vegetables in it. Then grill.
03Another way to prepare it is in a frying pan. Put in the bell peppers. Sprinkle with a bit of ground allspice. Sauté for approximately 10 minutes, you can cover with a lid and don’t forget to stir occasionally. Put the finished peppers in a bowl and cover so they don’t cool.
04In the same way, let's roast the zucchini, as soon as it browns slightly, put it in a bowl and continue in the same way with roasting the onions.
05During the process, chop the parsley for garnishing.
06Once done serve in a bowl. Add a serving of kimchi and, if you like, a protein or other alternative.
