More info60 g fine peanut butter
35 g lemon juice
25 g of maple syrup (or agave)
2 tablespoons sesame oil
1 garlic clove
150 g thin noodles
50-100 g water from cooked noodles
vegetables, tofu, sprouts, coriander, lime, peanuts or sesame seeds for garnish
Mix all the ingredients for the sauce in a bowl. Boil the noodles in hot water and briefly fry the vegetables and tofu in a pan.
02You can use any noodles – udon, rice, ramen,… With thicker noodles, such as fresh udon noodles, you don’t need to add water to the sauce and can use larger quantities of noodles (200-250 g). For thinner noodles, add a little hot water from the pot to thin the sauce. This way the sauce will coat the noodles beautifully and they will be nice and moist.
03Drain the cooked noodles, add the sauce, hot water and finally vegetables, tofu and nuts to taste. Top with lime juice and you’re done.
