400 g potatoes (peeled and diced)
2 teaspoons ground caraway seeds
2 bay leaves
a pinch of ground black pepper
2 tablespoons rapeseed oil (or sunflower oil)
1 tablespoon spelt flour (or all-purpose flour)
1 teaspoon sweet paprika
200 ml soy cream (or regular heavy cream)
2 vegan sausages
Peel and dice the potatoes. Boil them in salted water with caraway seeds until tender.
02Meanwhile, lightly fry the vegan sausages in a pan until golden brown.
03In a separate pan, heat the rapeseed oil and add the flour. Stir continuously until the roux turns golden brown.
04Add the sauerkraut, boiled potatoes (including the water they were cooked in), bay leaves, paprika, and black pepper. Stir well and let it simmer for about 10 minutes.
05Finally, add the fried sausages and soy cream. Mix thoroughly and let it warm up for a few minutes.
06Serve hot with fresh bread or croutons.
